Veronica Carroll Jenkins

Veronica Carroll Jenkins, age 58, a resident of Philippi, passed away Wednesday April 17, 2024, in J.W. Ruby Memorial Hospital. Veronica was born February 6, 1966, in Grafton, WV a daughter of Ronald “Homer” and Mary Lou (Barlow) Knotts. Veronica was united in marriage to her husband of soon to be 31 years George Jenkins. Veronica was a graduate of Grafton High School and WV Business College. She worked for Rex-Hide Inc. Veronica was owner-operator of Dairy King of Philippi for over 25 years. She enjoyed mentoring Dairy King of Philippi workers and interacting with customers. She enjoyed spending time with friends and family, especially her grandkids. Veronica was a member of the St. Elizabeth Catholic Church. She is survived by her husband George Jenkins of Philippi; son Terry Jenkins and wife Elizabeth of Philippi, grandchildren Keagen and Parker Jenkins; mother Mary Lou Knotts of Philippi; brother Don Knotts and wife Melody of Jeffersonton, VA; sister Mary Stevens and husband Curtis of Traskwood, AR; brother Paul Knotts of Gainesville, VA; mother-in-law Mary Jenkins of Grafton; sister-in-law Dawn Menear and husband Allen of Grafton; brother-in-law Jack Jenkins and wife Debbie of Grafton; sister-in-law Cathy Summers; many aunts, uncles, nieces, nephews, cousins, and special friends. Veronica was proceeded in death by infant son George Carroll Jenkins, father Ronald “Homer” Knotts, and father-in-law Hobert Jenkins. A mass of Christian burial will be held at St. Elizabeth Catholic Church 19 College Hill Philippi, WV on Saturday April 20, at 10 am with Celebrant Father Babu Joseph officiating. Inurnment will follow in the Grafton Catholic Cemetery. Following the graveside service, a gathering will be held at the St. Augustine Social Center for everyone to attend. In lieu of flowers memorial contributions may be made to the Barbour County EMS or Rosenbaum Family House of Morgantown.
